Bio

Mariella Organi, who began her career in the restaurant world in November 1991, has marked a path of significant successes and awards. She has been an Ais sommelier since 1994, the same year in which she married Moreno Cedroni. The couple brought the Madonnina del Pescatore its first Michelin star in 1995, followed by a second in 2006.

Recognised as Best Woman of the Room by Identità Golose in 2016, Organi has continued to make her mark in the industry, becoming a member of the scientific council of ALMA International School of Italian Cuisine in Colorno and Ambassador Emeritus for the Italian Association of Ambassadors of Taste in 2017. Her commitment and dedication was further celebrated in 2021 with the award for Best Room Service from Gambero Rosso and in 2022 as Maître of the Year from L'Espresso.

In his role as head of the restaurant, Organ manages a staff of about ten, and his focus is on balancing the different personalities to create an authentic and welcoming atmosphere for guests.

He fondly remembers the arrival of his first Michelin award in 1995 and his first great mentors, including three women protagonists of the 1990s: Livia Iaccarino, Renata Fugazzi and Emanuela Pierangelini, as well as Antonio Santini and Cristiana Romito. His philosophy is based on commitment, routine and consistency, recognising the importance of the emotional charge in his work.

His approach to room management focuses on respecting the different personalities in his team and creating authentic relationships with guests. Organ believes that even the most shy or introverted people can play a significant role, contributing to an atmosphere of harmony and serenity.

She was included in the 'Femmes en vue' programme of Les Grandes Tables du Monde, which celebrated her as a female success story in the restaurant world.
